- Ensuring food is correctly described and satisfies all compositional standards. - Food poisoning - Investigation of complaints involving food or premises where food is sold, prepared, stored or consumed. Managing non-compliance.
- Hygiene inspections and food sampling - Continuous inspection of all commercial premises where food is served or sold. Regular studies of shellfish samples also take place to establish safety before it reaches the food chain.

for the food industry.
Food and agriculture
We aim to ensure that
- food businesses are registered
- food is correctly labelled and described and meets quality standards
- manufacturers and retailers of food are regularly inspected
- restaurants and other food premises meet strict hygiene standards
- food is safe to eat
Animal health and agriculture
We aim to ensure that
- disease controls are complied with
- farm animal welfare standards are met
- animal feed and fertilisers are of satisfactory quality and safe to use
- contingency plans for foot and mouth, rabies, anthrax and other diseases are in place

Food safety regulations
The Food Safety Act 1990 and regulations made under it make it an offence for anyone to sell or process food for sale which is harmful to health. They also place an obligation on businesses to ensure that their activities are carried out in a hygienic way.
